OLD DUDE CHINESE RICE

 

RICE:

Rinse rice (repeatedly) until water turns clear
(Long Grain, enriched rice)

To cook, use 2 cups of rice to 2 cups of water

Cook on HIGH heat until boiling

Cook on MED heat for 5 minutes

Cook on LOW heat for 10 minutes

Remove from burner to cool

 

HEAT WOK, then cook bacon & eggs as directed below:

BACON:

Need 1 pound of bacon (cut in half)

Cube that half, then fry, put on paper plate/towel to drain

Repeat same with second half

Drain half of the grease off

Keep half to fry eggs

EGGS:

Need 8 to 10 eggs

Whisk in large bowl

Mix in Accent

Fry, put in clean bowl

REDUCE heat on WOK

 

GREEN ONIONS:

1 bunch of green onions, sliced

GARLIC:

Crushed or fresh garlic as desired

GINGER:

1 small root, sliced and chopped

 

HEAT WOK, ready to put together:

Add about 2 tablespoons cooking oil

Saute garlic and ginger until golden

Quarter rice into 6 sections, using wooden spoons

Dump rice into wok and start stirring

Add soy sauce as rice is cooking

Rice should “sizzle” and turn “brown”

Add bacon, heat and mix

Add eggs, heat and mix

Add green onions, mix and serve !!
