Taco Salad
easy to make, and tastes GREAT
makes 4 full-meal servings
1 lb bag Tortilla
Chips
1 can kidney beans, drained
1 lb lean ground
beef
1 cup grated cheddar cheese
1 pkg taco seasoning
mix 2 large
tomatoes, diced
1 head lettuce,
shredded
3 green onions, chopped
1 bottle Thousand Island dressing
In a large skillet, brown meat and pour off fat.
Add
taco seasoning mix and 3/4 cup water, and cook until water is absorbed and meat mixture
is moist but not runny. In the meanwhile, place lettuce in a large salad
bowl and toss with bottled dressing until coated.
Top with meat mixture, kidney beans, grated cheese, tomatoes and
onions.
Sprinkle with one-half of the tortilla chips, crumbled.
Arrange remaining chips around edge of
salad in bowl.
Serve immediately. Makes a full meal for 4 people.
