Waffles
(makes ~ ½ doz. 7" waffles)1Ύ cup flour
Ό tsp salt
1 Tbsp sugar
2 tsp baking powder
3 extra large eggs (separated)
1½ cups milk
Ό lb (1 cube) melted Butter
In a large bowl sift the flour with the baking Powder and Sugar. In a
smaller bowl beat the Egg yokes. Stir in the Milk and melted Butter. Add the liquid to the dry ingredients and combine in as few strokes as possible. In a separate bowl beat the Egg whites with the Salt until the mixture holds a peak. Fold the batter (with as few strokes as possible.)Heat a waffle iron until sizzling hot. Spoon enough of the batter into the
center of the waffle iron to cover about 2/3 of its surface. Close the iron and cook for about 4 minutes. Yields about 6 waffles, 7" in diameter.
